I would say take baby steps. Dialing down the feedback control will need a thorough rework should you change your motor, compressor or ESC.
I would recommend running the system in open loop...

Priced super cheap.

I think knowing motor rpm could be useful in that you will know if the motor is being utilized fully or weather the batteries are no providing enough current.
Also, Why dont you upgrade your MAP...
