Does the sport shift on the AT have over-rev protection? In other words, it won't shift under certain circumstances which would potentially damage the engine?

Yes

yes, but unlike most others it will let you stay on the redline and prevent shifting up, if you put it in fully manual mode, as well as downshift into any gear as long as next lower gear won't over-rev the engine.
