Here's my recommend 3 step process:

1: Read this article:

2: Buy these high-quality inexpensive filter: PL14460 ($5.76)

3: Change oil filter often (because it's easy), about every 2-2.5k miles. Change oil every 5k miles.

How does it surpass OEM filter quality when its from the same manufacturer as the OEM oil filter...

Because it's made to a higher spec than the OEM filter. The OEM filter only has to meet a certain specification.

This isn't to say the same company can spend some more dollars and offer something even better.

Do these versions have the same bypass pressure? Subaru has a specific spec which is higher than most. I'm going to stick with my Subaru black Tokyo Rokis and a filter mag.

The only change I might consider is to a Canton cartridge filter..

Changing our oil filter is absurdly easy, so I'm considering changing my filter every oil change AND every mid-oil-change. Perhaps oil change at 5-6k miles and filter change every 2.5-3k miles. Is this just pointless overkill? Thoughts?

You described exactly what I'm doing.

Oil every 5, filter every 2.5.

Oil every 3 in the summer when I'm at the track instructing or playing.

I believe those PL14460 filters don't have an anti-drainback valve.

Just get the OEM tokyo roki filters. You can get a 6 pack on ebay for $39.99 shipped (6.65 each!)
