Service intervals if not usedmuch?
 
Basically our Subaru dealer recommends servicing every 6 months or the owners manual mileage intevals. Thing is, my manual states servicing every 7000km. But i only do like 4-5,000km a year. In my case, is it safe to do servicing once every year only instead of 6 mos? Or can i even extend to every 1.5 years to hit the 7,000kms?

It is every 6 moths OR 7,000 kms whichever comes first. If you do not follow that schedule you will have no warranty if an oil related issue occurs. If no warranty then you can do whenever you want.

Tcoat is right.Change it after 6 months if you're not a the mileage mark.

Don't skimp on oil changes, it's the last thing you want to do.

I am also in the same boat i have about 3600 miles, i got my brz in june and im not going to drive much now that winter is around the corner. I was debating whether I should change my oil myself (which im way more than capable of doing!), or let the dealer do it for the warranty.

I have a 2015 with only 2k miles on it. Should i be changing the oil every 6 months if I put like 700 miles on it a year? I figured once a year was sufficient, but I'm an idiot lol.

You can change it yourself and still maintain warranty. Just save the receipts.

Definitely, definitely save receipts. I cannot stress this enough. Subaru is AWESOME about taking care of customers if you have proof you took care of your vehicle. Sometimes even after warranty. Go overboard. Scan your receipts. Take pictures of you changing your fluids with a little sign with the date and mileage. You'll be happy you did when your motor is 1000 miles out of warranty and you call customer service asking for help :)
