All I’ve seen (but don’t have a link to) is a thread on the forums saying you have to remove the gauge cluster and re-flash it or something so that it uses a different type. But you’d lose the BRZ splash screen.

Don't really think that's worth it at all..There's gotta be a simpler way.. hell contacting a Subaru engineering division might be a better (far-fetched) option ..

nevertheless... I think you might be on to something,.
There is gotta be a combination of things (buttons on the steering wheel/ pedal/) to enable the setting. usually cars have such combinations to open more deep settings.
