30k maintenance for OFT and UEL users

I'm going in tomorrow for a 30k mile maintenance, and I have UEL headers and OFT Stage 2. Should I flash back to stock when I bring it in, but wouldn't the CEL be on due to the headers? Or should I just roll in and just inform the Service Advisor to let me know if they have to do anything big like a TSB or anything relating to the ECU?

Yes, if you flash back to the stock map and retain the UEL header, you will throw a CEL. If you are hoping to avoid questions about your modifications (for whatever reason), the best solution is to replace your UEL header with the stock header and flash back to stock map. Otherwise, being upfront and honest about your modifications is likely the best solution. If they note an ECU-related TSB, which you elect to have flashed, I would offer to flash back to stock, making them aware of the resultant CEL.

I'd just go in, specify what you want done, mention that you have an aftermarket header and an aftermarket tune.

With the exception of replacing the brake fluid, I don't see anything in the maintenance schedule that is special to the 30,000 mile maintenance point.

I would ask: trans/diff fluid change, brake fluid flush, replace engine air filter, cabin air filter, rotate tires, change oil and oil filter. I miss some but you got an idea

Yup, you can do most of that yourself. Save some cash and the hassle of taking off the header.

YMMV but my dealership has never noted of my mods. The technician I talked to said they don't unless they're asked specifically to service an aftermarket part.
