The only cars I ever bought without driving were inexpensive and of which I wasn't buying purely for the driving experience, but I would have to drive a car like this, especially something new, before dropping the $20k...

It doesn't work quite like that. When you get on a waiting list you put down a set amount (the sky redline required $1000). When your number comes up you have the option of ordering or passing. If you order, then you automatically forfeit your $1k. You can still reject the car when it gets to the dealership and test drive it, but you lose the $1k.
