I'm running 245/35's and have been for almost two years now. Very slight stretch on 18X9.5. Next round I'll probably do 255/35, but I was also considering 255/40 for a little more sidewall? 255 won't strech, but I think a 40 sidewall should clear okay. I'm about 1.4" dropped on KW V3's.

No fender roll, no rubbing, no spacers, ~1.5 drop on coils |
I had the same question as op, and decided to order 255/35/18 for wheels that are 18x9.5 45 or 40 offset don't recall top of my head. I'm waiting for spring to out them on. But from the research I did 255/35 will not screw with the mph on the dash. And I asked on fb page and people said 255/35 shouldn't cause any problems. I will see in a few months
