why'd they go with the AEM AFR gauge, and the AEM boost gauge separately? Couldn't they have just used the AEM failsafe to get the functionality of two gauges in one pod, plus the failsafe capability?

just to be able to monitor both make sure everything is running right

You can monitor both on the AEM Failsafe wideband. AFR on the warning outer LED's, boost on the OLED in the center, or vice vs if you prefer.
