After pointing out to my CFO flaws in the cheap mechanisms of consumer grade slicers, she approves of my decision to hold out for a good one.

Since you don't get your beef from California, where they are scrub sage fed, you won't need a HD slicer.

Those slicers sold in CA have to have a diamond tipped blade to cut through their beef.....
