My Toyota also behaves in this manner... sucks when you turn the A/C off because you suddenly feel too cold and the dial was around middle. Extremely cool to extremely hot in no time flat!

Judging from the number of "thanks" on my post ...... we aren't the only ones .....

Yep, I traded our roadster (Miata) for a coupe (FR-S) and had central air conditioning installed in our house ..... yes, central A/C in western Washington .....

I also discovered that the ONLY phrase to utter when the "temperature changes" is ...... "yes, dear, I'll change the thermostat".......

I've always tried to manage by fact. The facts are that my wife seems less bothered by heat every year and my 94 year old mother-in-law keeps her apartment hot enough to sustain an orange grove. So I've developed an evidence-based approach that may have appeal for you:

I keep the thermostat set to her age.

I actually had time to Google the Camry V6 0-60 now, ....., yeah, I won't be trying to beat one of those in a straight line. It has the same engine as our Sienna (except it weighs more than a thousand pounds less (and what a difference that makes)).....maybe in the twisties.

BTW, If you're trying to "save gas" by driving around with the windows down, you're hurting your mileage more than running the AC (at least at anything above surface street speeds). The Twins are slick cars, and windows down adds lots of drag.
