I have the Perin 2.5 resonated and I would not want it any louder than that. There are many pick up trucks that are louder around here so I get no reall attention. That said, I just added the JDL UEL catted headers and the appropriate OFT stage tune and it is moderately louder but there is more difference in tone than volume. The set up works very well performance wise.

Yup, this is why I bought a Perrin so when I'm ready for that JDL catted header & OFT it won't be so hella LOUD! Perrin 2.5 is loud when it needs to be.

My exhaust is a bit over the top right now and I would like to soften the noise a bit especially the start up.

JDL uncatted UEL header
JDL 3" catted OP/DP with resonator
Perrin 2.5" resonated

Would adding back the stock OP/DP quiet it down a bit?

I ended up returning to the stock exhaust. For my tastes, the exhaust just began to dominate the driving experience. That said, I also just purchased a 2015 Cayman so I am selling my BRZ. It says a lot about just how good the BRZ is when I need to get a Cayman to do better.......

Returning to Stock FP would quiet it down considerably. You can also tune out the cold starts in the morning. I run a Delicious tune and Zach tuned out the cold starts so i'm about as loud as idle when i turn my car on in the morning.

I'm also a lot louder than you.
