Damn no mileage that's great! I had to not only prove insurance on my main commuter car, but limit the mileage as well or else nobody would underwrite it.

Single car accidents are a big red flag to insurance companies. If you can avoid a claim on it, I would (and I have personally). It might cost a bit and hurt, but in my personal experience the pain to my wallet made me a better driver.

Grundy doesn't care as much as Hagerty and others.

Grundy's app process was more difficult and required more back and forth though.

OP: Yes, they will cut you a check so you can buy a used fender to save money. They have preferred shops they'll deal with directly but will also cut a check based on their estimate. The risk there is if it costs more, you have to pay it. If it cost less, savings for you.

As for the fender swap, the last fastener underneath the stupid fender trim piece can be removed without taking off that trim piece. It's a bit of a pain but unless you want to buy all new clips for that piece I suggest dealing with the pain. You can then CAREFULLY compress the clips and then you have to rip off that piece as it's also double side taped on. Again though if you just find a used fender in the right color with the same design (86 boxer one for you of course) that's by far the easier path to take.

However as others have said, don't claim a fender. Buy a used one in the right color already if you can find it (used fenders go for 100-200 depending). Or buy a new one and paint it (figure 400 and up depending on where you get the fender and who does the paint).

FWIW, if you have to paint it anyways, just buy a new fender from Subaru. It's not that expensive compared to used and the paint guy will have an easier time not having to sand off so much material which will save you some funds potenitally.. and no need to worry about damage to the used fender, etc.
I haven't found a matching fender, but I did realize the door/hood would have to be matched anyways..so I'm not really doing myself any favors by installing it myself right? I think the biggest advantage would be that I could pickup local as opposed to having the shop wait on shipping.

Even more so than collision with another car?

I'm also considering taking this opportunity to shave the badges. Nothing like using a money-loss opportunity to spend even more money.

Paint matching is best for sure. But if you get the original color on a fender somewhere you don't have to worry about it at all.

You can also just bring the damaged fender to a paint shop and they can usually match it pretty accurately depending on the color.
