The bitterness. They're unbalanced. They were designed to keep for a long time, not to taste good. I like the hops, and I've had a hazy IPA or two that was alright, but mainly they just overwhelm with bitterness. In contrast, a good imperial stout uses all kinds of other flavors to overwhelm the bitterness, like how sugar outdoes bitterness in chocolate.
