Generic consensus is to keep lowering IIRC within reasonable 1", eg. 20mm and alike. Our cars even stock are already relatively low/have relatively low ground clearance/relatively short shock travel (especially in rear). As bonus with such reasonable drop you also won't need load of other parts to fix messed up geometry and other issues that may stem from too low (eg. extra wear of bearings / thus need for diff riser). Tein Flex A&Z, RCE Tarmac 0, Koni yellows or Billstein B6/B8 with stock or RCE yellow springs, to name few.
P.S. I suggest for track performance to get something for better performance alignment. Eg. camberbolts for front, adjustable rear LCA, as stock our cars have only toe adjustment, but there is much grip & better tire wear to be had from more static camber on track. Actually imho extra camber vs stock alignment may net faster cornering speeds then what coilovers may improve.

Need either end goal, or "at the moment". You can only tune for one or the other, unless you want to severely compromise one or the other.

Based on your post, I'd say stick with the supplied 6/6, and then order more springs if you want a change.
