Small, wide, and meaty?

Why does nobody run 15x8-15x9 with a meaty tire set up on these cars? I feel like I’ve only seen one car like that and it was extremely clean. I’d like to go that route after FI but are there enough options out there for our cars in those sizes?

Don't believe they will clear the brakes.

I'd also check available tire selection. Given that smaller the wheel size, most often then not also smallest min-max tire width available for those wheels size, it might be hard to find wide tires for small diameter but wide wheels .. many modern performance tires are also often made available only starting bigger size wheels, which may also reduce choice. And third issue you may run in - brakes and tie-rod ball joint clearance. There are some 15" wheels that people told as clearing, but most of such were some rally wheels, rather heavy that is, and usually not that wide as you may wish.
So first check if you'll find wished tires for such wheels, and most important - don't buy any wheels before ensuring they will clear brakes & tie-rod joint. But imho better choice would be getting 16" wheels, as much better selection of wheels, much more chance of them clearing and better tire selection.

15's tend to have good size selections for the good competitive 200tw tires because of miatas, but anything else might be hard to source.

That said, without them clearing the front brakes it's a bit of a moot point.

As everyone has said, unless you own a wheel shop with tons of 5x100 15" stock, there is just no way to know what will fit. I really wish Toyota insisted it was 4x100 or 5x114.5.

Boomerang: that site is more for outer tire/wheel shape clearance/flushness in wheel arch with some unknown wheel inner wheel shape pictured, and without spoke shape at that. It is more usable for generic outside fitment flushness checking for looks, not so much for if specific wheel of specific size won't rub on brake caliper inside wheel or on tie-rod balljoint. Different wheels have different inner shape/design, it also may depend on width & offset (eg. some vendor for some wheel design may have different "face" design depending on offset range, with flatter or more concave wheel spokes .. as result, supposedly "same" wheel but with different offset may rub or may clear, with no way to tell for sure without checking clearance in some way (but not via your mentioned site)).
For aftermarket big brake kits vendors usually provide also brake fitment templates and/or list of wheel models & sizes of confirmed fitment, but i've yet to find brake clearance template for twins stock brakes. Such templates one can print out, cut and check on own wheels or at wheels at shop (or send template to wheel shop and request to check clearance). And as i've mentioned few times already, with 15" wheels it's also poossible for tie rod to rub on wheel inside, so brake clearance is not the only thing that needs to be checked.

Not all 15's will clear, depends on the wheel (mainly barrel thickness to clear the front brakes, along with spoke design, offset, etc). If you want to take the gamble, there are options out there if you Google search "15x8 5x100". Mainly replica wheel brands and offsets are around +20 or +25, so you'll also need suspension with camber adjustment to get them to fit in your wheel wells properly.

16's would be a safer bet. I have 16x8 setups for summer and winter (one with +45 offset, the other +25), -2.0 camber all-around. 225/50/16 for both setups, which has a decent amount of tire selection.

And I'm assuming you're talking about "stvnnakamura" on Instagram? He's running custom 4x114.3 adapters, 15x8.5 and 15x9, 205/60/15. He also has Rocket Bunny wide-body fenders, so his offset is super low, maybe even negative. Looks amazing though:

15x8 Rota Slipstream with a +20 offset I believe. 225 45 15 Hankook RS4s, made this car a joy to drive with the better gearing.

Had to clearance some of the suspension components for it to fit properly.
