going to install the subframe bushings and tranny mounts and see what improvements I get. I don't want the car vibrating at idle, but I think some stiffer bushings will help especially when launching the car or cornering hard.

Depends on what you put a priority on with this car.. When you add stiffer mounts to tighten up the driveline.. You will be transferring NVH to the cabin..
Everything is a compromise.. It's setup to be liveable on an everyday basis.. If it were my dedicated track toy.. I would be addressing some of the slack in the system..

Sometimes when I let the clutch out and get on the gas it'll fee like it sort of lurches or jerks and then accelerates. I get the same thing if I lift, it sort of feels like a little impact. IS that caused by the weak-sauce bushings and motor mounts?

What specifically should I change to fix that? This is my autocross toy but ALSO my daily driver, with 2 hours a day spent highway commuting. I need a happy medium here, if at all possible

Easy. Sounds much much worse than it is. Just have two jacks if you don't have a lift, and impacts help. Make 100% sure the subframe/diff are lifted back up and in the right position before putting the bolts back in, and start easily by hand. Otherwise this is where people run into issues.

IMO it is much better now, but I think the motor mounts are the other 30%. That's next.

We made this video which shows how much movement is in the rear diff. This will be Stock vs. the Cusco rear diff mount.

Myles at @Racecomp Engineering also speaks highly of the Whiteline Rear Diff Inserts, and I would agree with him. I think anything you can do to take up the slop is going to make a big difference.
