So I was looking into buying 5x114 adaptors, but I'm a little iffy on what the conversion will do?
Anyone know any cons or reasons for why I shouldn't buy them?

They will make your new wheels stick out. Usually no one ends ups liking them. The whole mounting an extra hub on a hub usually ends up eating hub bearings over a long or short time depends on the abuse.
It's like running a thick wheel spacer. Unless you get a whole new hub with 5x114 just buy the right blot size wheels.

In the end save up, and just drop that extra cash on the proper wheel offsets/size.

If wheel spacers ruin bearings, why doesn't changing to wheels with less offset do the same?

It's usually done so you can put a wheel on the car that is only available in 5x114. If you wanted to run, say, a 5x114 Toyota Supra wheel on your BRZ, the simplest way to do that would be with a bolt-on wheel bolt pattern adapter.

Pros: They are relatively simple to purchase and install. They are completely reversible.
Cons: They are not cheap. They are at LEAST 15mm thick. Your original spare tire will no longer work. If they are less than 20mm thick, the original studs may poke out into your wheels.

They will be pushed out, but whether or not they stick out depends on the width and offset.

That's kind of a broad statement.

I have not observed this to be the case.

I'm running a 25mm and 50mm adapter for over a year and half now and have had no issues with them whatsoever.
