DELETE THREAD
So I was looking into buying 5x114 adaptors, but I'm a little iffy on what the conversion will do?

They will make your new wheels stick out. Usually no one ends ups liking them. The whole mounting an extra hub on a hub usually ends up eating hub bearings over a long or short time depends on the abuse.
It's like running a thick wheel spacer. Unless you get a whole new hub with 5x114 just buy the right blot size wheels. In the end save up, and just drop that extra cash on the proper wheel offsets/size.

If wheel spacers ruin bearings, why doesn't changing to wheels with less offset do the same?

I'm running a 25mm and 50mm adapter for over a year and half now and have had no issues with them whatsoever.
