My dad decided to smoke some meat "the fkn way the fkn Indians fkn did it" one time. The problem was he had no clue how it was done other than a 17th century drawing in a book. We had rotting salmon, beef and turkey hanging over a smoldering pine fire in the back yard for about a week. I will never forget that smell.

OK, one more quick one.

Curing bacon in the wintertime. We had two 4'x8' sheets of plywood on saw horses out in the barn. Then we would lay slabs of pork (bacon) on a bed of salt and brown sugar on the tables, then cover with more salt and brown sugar.

My job was to hand rub each side of each slab, twice a day and turn them over ..... my grandfather would make the determination as to when they were "done". Yep, nutten much better than a mess of thick sliced, sugar/salt cured bacon, cooked in an iron skillet, along with some country fresh eggs.

DANG! ...... I'd best go to bed before I run in and cook up some bacon & eggs .......
