My personal view on carbon is that it has been overused and overworked within the aftermarket and even by the OEMs. It is a beautiful way to accent the interior of a vehicle but it can quickly turn into "too much". The same may be said for leather, Alcantara or even Audi's famous piano black trim.

I'd be interested in a dash that can cover the sides if one were to install aftermarket double din head units. Cover it in such a way that there are no gaps on the side.

It's cheaper and easier (and likely doesn't add enough weight to matter) to just overlay the existing parts with carbon fiber. Like Alex said, it's easy to go overboard, so pick your parts wisely. Personally I only want to overlay the center dash piece, and the rest of the parts I will do something different like satin chrome or piano black.
