A simple solution to this problem would be a manual shut-off valve in the oil feed or return line to stop the oil flow through the cooler. Close it during the colder months, open it back up when things start to warm up. Simple.

Any ideas on where I can find a manual shut off valve that'll fit?

Yes, that is icar. That was during one of their snow lapping days during 2016 or 2017 I think. The guy behind me works for icar and took the car out for a couple of sessions where he decided I was good enough to do tandem behind me
