If I had to field a guess I would say the materials have better flow characteristics than stock while still keeping the airflow uniform across the MAF sensor.
Who knows what the airflow looks like without a filter at all right?
Also, i would be willing to bet that all these filters lean out the AFR(by a small amount) and that is where their gains would mostly come from.
