I did check the log I just sent to Delicious Tuning, during the 3rd gear moving log, the coolant temp were between 87-89 degrees, and oil temp were between 97-98 degrees. This log was taken after the car been idled for 15 minutes from a cold start while collecting another set of logs.

If you can see the temperature dropping below half once up to temp, then you most likely have a stuck thermostat. The job of the thermostat is to regulate the engine temp, so if it's fluctuating up and down it's not working properly.
