Does anyone have a recommendation to go with one over the other? Do they leave any sort of transfer layer that would prevent me from swapping in the stock pads for street use?

On my Spec Miata, I recently switched from GLoc 12/8 to 12/10 and then 16/12. Holy crap, never going back to the softer pads - much more confident braking. For a mixed-duty pads, maybe the 10/8 combo is good. But for track duty, I like a pad that stops right NOW.
