Tire Recommendation - Tail Happy Longevity

I plan on getting a set of TSW Nurburgring 18x8 +35mm wheels. Now the question is what tires....

I don't do track days (despite what my username might imply). I don't need anything performance orientated, and I would prefer longevity over grip. This is my daily driver. Price is no object. I live in SoCal, the weather is always sunny. So what make of tire/compound/size should I be considering? I still want to rear end to slide out as easily as it does on the stock set up. I like being able to use the throttle to "steer" the car. Will having the wider 8in footprint inhibit that?

Another sorta related question: I plan on lowering the car with the Eibach Pro Kit. Is there a risk of rubbing issues with the flush +35 offset? Does the Pro kit make the ride significantly harsher? With the tire size, offset, and lowering changes will that throw off my speedo? What adjustment figures will need to be made to compensate?
