Are the fittings universal? i.e. same thread etc. I might retain a thermostat regardless as it's not that much more expensive.
As for pressure drop, you sure the bigger one is lower pressure drop?
Also, does anyone know if the oil cooler line is upstream or downstream of the filter (i.e. cool, then filter, or filter then cool). I assume ideally it should be filter then cool, but might be wrong.
