I would say 4-5 business days tops to get it done, but 2 weeks to be safe (just in case they're backed up).
Also, if there's one in-stock on the shelf they'll just send you that one and keep your core so it would be a couple days tops.
For the gears, I just like everything shifting properly. I'm a stickler for proper shifting and we're only talking $100 or so difference to get the full setup.
