First of all, just recognize that while these rims will fit, they will actually slightly decrease the performance of the car due to weight, friction, contact pressure. That said, if that's the look you want, then go for it. Generally, for a 9.5" rim you want the tire width between 245 and 275. Smaller than that and stretch will not make a good seal and you don't need larger. Then you need to calculate the profile. You want a circumference of about 77.35". That would make a 245/35/18 a good fit. I would not suggest anything wider.
If you are also going to lower the car with that wide a tire, you may have some fender rub given the width and offset. There are some here with more experience with wide tires on the BRZ, and you'll have to ask them about it. You may need to roll the fender a bit with a large drop.
